I have tried many a maple syrup and this one is the best I've ever had. Before the online store, my wife and I drove up and met the owner. He showed us his process and we tried each of the different types. I think the dark is most versatile, but the very dark is rich and delicious if you want something with an even more robust flavour. And the amber is a little lighter if you prefer that.
